The Red of the Cattedrale is made from the late harvest of the Montepulciano grape, between the middle-to-end of November. The grapes are fermented over a long period of at least 20/30 days of maceration before being pressed. They are then allowed a slow fermentation process because by this time it’s the end of winter/beginning of spring and the temperature is colder.
The wine is then aged for several years in barriques (oak barrels), after which it’s mixed with different vintages. It is therefore a liquor-like wine, completely natural (17-18 % alcohol), and maintains a good sugary residue.
Dark red with purple reflections, dry with a good acidity that is slightly masked from the evident, but not overtly sweet, notes of spices and of Morello cherry…
