The Pecorino grape is a white grape which traditionally is grown in the interior hills of our province as it is adept at a slightly cooler climate and clayish soil. Grown in the outback as a result of a shorter growing cycle compared to our native grapes, it is the last to vegetate in the Spring and it’s the first to be harvested in September.
Production nearly ceased due to the limited yield and because of the depopulation of the outback.
In the 90’s, following a decree from the Dean of the Marche/Abruzzo Someliers, Teodoro Bugari, the grape was ridescovered by prof. Seghetti, of the Ascoli Oenology Institute, and by the ampelographer, prof. Moretti of Conegliano, thus giving it a new lease of life.
The processing is typical of white wines, destemming, cool skin contact, fermentation at low temperatures, “sur lie” aging, bottling. Wine normally over 14 with a full body which leads to be defined Red Wine dressed as White.
