The main characteristic of the Passerina is that because of its strong acidity and very low PH, it has a long aging phase and can be stored for 7/8 years. In particularly good vintages, it can be stored for up to 15 years or more.
It is aged “sur lie” in stainless steel vats for about 12 months and is then bottled and left to age for at least a further two years.
the wine has a fresh and pleasant taste, with a straw-yellow colouring and scents from aromatic herbs. As it ages, it will release a sapid taste of moss, underbrush, and then hydrocarbon.
